Salted Chocolate Chip Cookies on a Snow Day

Let’s take this in together. Salted. Chocolate. Chip. Cookies. Chocolate chunks, all the sugars, softened butter, dried whole Heilala vanilla bean, 72% dark chocolate (healthy, right?), and Maldon flaky sea salt. Among other things.

Are we ready to delve into the deliciousness that is these cookies? Great, let us delve.


Last autumn, I read about NotWithoutSalt‘s incredible salted chocolate chip cookies. What was the best part? Learning that they were available in mix form so that I didn’t have to buy flour and sugar and vanilla and all that comes with baking cookies. Much as I want to say that I bake all the time and that I’m a kitchen goddess, there simply isn’t always time for baking. So as you can guess, gourmet cookies in mix form was 100% happening as soon as I read about it.

Because we were all locked inside yesterday due to obscene amount of snow (which I am very thankful for–feeling #blessed with two snow days!), I figured that it was as good a time as any to whip up a batch of cookies. Is snow day not synonymous with cookie? I think yes.

After digging up my tube of cookie mix, it took .6 seconds to assemble these delicious treats. The only work I had to do was soften the butter and crack an egg. I should also mention that because we don’t have a mixer, a lot of hand mixing with a fork was involved. Good thing I’m strong like a ox–and by that I mean I wanted to stop mixing after two minutes because my arm was going to fall off. You try creaming butter and sugar with a fork and tell me how it goes for you.

Needless to say, I survived the endless mixing and went on to cover the dough with plastic wrap and refrigerate it all day while we partook in other activities. Come dinner time, the cookies were ready to hit the oven. Note: don’t forget to sprinkle on the salt! It is most essential.

As my roommates and I sat around the table silently enjoying our sweet, salty, chocolatey delights, we smiled at each other, satisfied with the day and our creation. Snow day for the win.


PS– you should definitely watch the quick video that NotWithoutSalt shared in which she makes the cookies. It will have you drooling faster than you can say ‘Juno 2015.’
PPS– I snapped these pictures the day after we baked the cookies, so the chocolate isn’t as glossy as it was straight out of the oven. Not to worry-they’re still delicious on day two.
