Friends it’s National Chocolate Day! Wow, how do we even celebrate?!? Maybe by whipping up a batch of this super easy and healthy(ish) fudge. Sounds good to me.
In other news, it’s officially fall foliage season in Nashville, with pictures of orange and red landscapes popping up on Instagram, Facebook, and seemingly everywhere else. Luckily the weather has been beautiful and the cold hasn’t set in yet, but soon enough large winter jackets and thick socks will be necessary. Until then, I’m enjoying what’s left of the sunny weather and trying not to crumble under a pile of school work. Read on to see the things that are keeping me sane happy!
Fall foods, aka brussel sprouts, carrots, apples, sweet potatoes, are some of my faves, and this vegetable and lentil bowl does a great job of mixing them all up and adding ginger and tahini to make it P-O-P.

The Brave Collection, a line of jewelry handmade in Cambodia by talented artisans who come from underprivileged backgrounds or suffer from disabilities. The proceeds go back to the artisans and young girls of the community to provide leadership development, sustain and empower fair trade, and inspire them to make change.
